Couscous is a type of semolina used in the north African cuisine. This dish combines couscous and egg to make a healthy and filling breakfast that can be prepared on the go.
- Couscous – 1/2 cup
- Onion chopped – 1/2 cup
- Cumin – 1 spoon
- Egg – 4
- Chili powder – 1/2 spoon
- Turmeric – 1 pinch
- Oil – 2 spoons
- Butter – 1 spoon
- Salt to taste
- Add chili powder,turmeric, salt and butter to the couscous and mix well, then add a half cup of boiling water to the mixture and keep it aside for the couscous to puff up
- Add a spoon of oil to the pan and add cumin and chopped onions and saute until light brown.
- Now mix the puffed up couscous with a fork, add the eggs, sauteed onions and beat well.
- Add a spoon of oil to the pan, and add the beaten mixture and cook on low flame. After 5 mins turn it to the other side and cook well. Hot and tasty couscous omelette is ready to serve.
